Instant Pot Bone Broth

A rich, homemade beef bone broth can be prepared in an Instant Pot in hours instead of days.

Instructions

  1. Preheat the oven to 400 F and arrange beef bones on a baking sheet.

  2. Roast bones for 40 minutes, turning once after 20 minutes.

  3. In an Instant Pot, combine 10 cups water with vinegar, bring to a boil using the sauté function, then add roasted bones and boil for 15 minutes.

  4. Drain bones, return them to the pot, and add vegetables, bay leaves, 7 cups water, and salt if desired.

  5. Seal the Instant Pot lid, set to pressure cook for 2 hours, then allow natural pressure release for 35-45 minutes before venting.

  6. Strain the broth through a fine-mesh sieve (and cheesecloth if desired) into a large bowl, discarding solids.

  7. Chill the broth thoroughly, then remove and discard the solid fat layer.

  8. Store the bone broth in jars or freezer containers, or use immediately.
