Instant Pot Bolognese Sauce

Instructions

  1. Select the sauté function on a 6-quart Instant Pot and heat oil. Add onion, carrots, and celery; cook for 4 minutes until the onion softens.

  2. Stir in ground beef, garlic, salt, pepper, and thyme; cook until the meat is browned, then drain any excess fat.

  3. Pour in wine and chicken stock, scraping any browned bits from the bottom of the pot.

  4. Add bay leaves and crushed tomatoes. Secure the lid, set the valve to seal, and pressure cook on high for 20 minutes; perform a quick release.

  5. Stir tomato paste into the sauce and switch to sauté; simmer for 5 to 6 minutes until thickened.

  6. Mix in parsley and cream, heating until warm.

  7. Serve the Bolognese with cooked pasta, Parmesan cheese, and extra parsley as desired.
