Instant Pot Beef Stroganoff

A complete one-pot beef stroganoff can be quickly prepared in an Instant Pot pressure cooker.

Instructions

  1. Set Instant Pot to sauté, add oil, then brown beef with salt and pepper. Remove beef.

  2. Add 1 tablespoon butter, then sauté onion and mushrooms for 2 minutes, adding garlic for the last minute.

  3. Return beef to the pot with beef stock, wine, Worcestershire sauce, and mustard, scraping up any browned bits.

  4. Secure the lid, set to high pressure for 10 minutes. Perform a 5-minute natural release, then quick release remaining pressure.

  5. Stir in noodles, secure the lid, and pressure cook on high for 5 minutes. Quick release pressure.

  6. Combine 1 tablespoon flour with 1 tablespoon butter; stir into noodles. Set the pot to sauté, stir in sour cream, and cook for 1-2 minutes until hot.

  7. Serve garnished with fresh parsley.
