Instant Pot Beef Stew Recipe

Instructions

  1. Cut beef into 1-inch chunks, trim excess fat, and season with salt and pepper.

  2. Heat 1 tablespoon of oil in an Instant Pot on high sauté. Sear beef in batches until browned, then remove.

  3. Add remaining oil, sauté onion until translucent, then add garlic and tomato paste and cook until fragrant.

  4. Deglaze the pot with wine, thyme, and bay leaf, simmering until the liquid reduces by half.

  5. Turn off sauté. Add potatoes, carrots, parsnip, beef broth, and browned beef; stir. Secure lid and pressure cook for 25 minutes, then naturally release pressure.

  6. Whisk cornstarch and Worcestershire sauce until smooth.

  7. Remove bay leaf. On high sauté, add peas and cornstarch mixture; simmer and stir until stew thickens.

  8. Season to taste and serve warm.
