Instant Pot Beef Bourguignon

A popular French beef stew, this rich bourguignon can be quickly prepared using an Instant Pot.

Instructions

  1. Using the Instant Pot's sauté function, brown onion and bacon; remove them.

  2. Add vegetable oil, then brown dried beef cubes on all sides in the pot; season with salt and pepper.

  3. Stir in minced garlic for one minute.

  4. Return bacon and onions to the pot; add carrots, red wine, beef stock, beef base, bay leaves, tied herb sprigs, and tomato paste. Sauté for 2 minutes, scraping the pot bottom.

  5. Cancel sauté, seal the Instant Pot, and pressure cook on high for 35 minutes. Perform a 10-minute natural pressure release, then quick release remaining pressure.

  6. While cooking, combine flour and butter to create a beurre manié.

  7. Remove bay leaves and herb sprigs. With the sauté function on, add mushrooms and pearl onions (if using); cook for 5 minutes until tender.

  8. Stir in the beurre manié and cook for 2 minutes until the stew thickens. Adjust seasoning.

  9. Serve with desired sides and garnish with parsley.
