Instant Pot Artichokes With Lemon-Garlic Aioli Recipe

Instructions

  1. Prepare artichokes by removing tough outer leaves, trimming 1 inch from the tops, rubbing cut surfaces with lemon to prevent discoloration, cutting stems flat, and trimming thorny leaf tips with shears; rinse thoroughly. Peel stems if desired.

  2. Add 1 1/2 cups water, 2 lemon slices, sliced garlic, a bay leaf, and 1/2 teaspoon kosher salt to the electric pressure cooker pot.

  3. Place the trivet inside, then arrange prepared artichokes and any peeled stems onto the trivet, cut-side up.

  4. Secure the lid, set the vent to sealing, and pressure cook on high for 12 minutes. Perform a quick release when done.

  5. While artichokes cook, combine mayonnaise, 2 minced garlic cloves, lemon juice, lemon zest, mustard, black pepper, a dash of salt, and optional red pepper flakes in a blender. Blend, season to taste, and transfer to a serving bowl.
