Instructions
-
Preheat oven to broil and grease an 8-inch springform pan.
-
Beat butter until smooth, then add half of the sugar and continue beating until light and fluffy.
-
Incorporate egg yolks and vanilla extract into the butter mixture.
-
In a separate bowl, whisk egg whites until light and frothy.
-
Gradually add the remaining sugar to the egg whites, continuing to whip until stiff peaks form.
-
Fold a tablespoon of egg whites into the butter mixture.
-
Gently fold in one-third of the flour mixture, then one-third of the remaining egg whites.
-
Repeat this process twice with the remaining flour and egg whites, mixing until just combined.
-
Divide batter in half; whisk spices into one half of the batter.
-
Spread a quarter of the unspiced batter evenly in the prepared pan.
-
Broil until puffed and golden (about 5 minutes for the first layer), then remove from oven.
-
Brush the cooked layer with melted butter.
-
Spread a quarter of the spiced batter on top and broil until cooked (about 3 minutes); remove and brush with butter.
-
Repeat with alternating spiced and unspiced batter layers until all batter is used, brushing each layer with butter after broiling.
-
After the last layer cooks, carefully loosen the cake from the pan sides.
-
Release clamp, remove cake, and cool on a wire rack.
-
Once cooled, wrap in plastic and store in a cool place. Serve in thin slices.
