Instructions

  1. Preheat oven to broil and grease an 8-inch springform pan.

  2. Beat butter until smooth, then add half of the sugar and continue beating until light and fluffy.

  3. Incorporate egg yolks and vanilla extract into the butter mixture.

  4. In a separate bowl, whisk egg whites until light and frothy.

  5. Gradually add the remaining sugar to the egg whites, continuing to whip until stiff peaks form.

  6. Fold a tablespoon of egg whites into the butter mixture.

  7. Gently fold in one-third of the flour mixture, then one-third of the remaining egg whites.

  8. Repeat this process twice with the remaining flour and egg whites, mixing until just combined.

  9. Divide batter in half; whisk spices into one half of the batter.

  10. Spread a quarter of the unspiced batter evenly in the prepared pan.

  11. Broil until puffed and golden (about 5 minutes for the first layer), then remove from oven.

  12. Brush the cooked layer with melted butter.

  13. Spread a quarter of the spiced batter on top and broil until cooked (about 3 minutes); remove and brush with butter.

  14. Repeat with alternating spiced and unspiced batter layers until all batter is used, brushing each layer with butter after broiling.

  15. After the last layer cooks, carefully loosen the cake from the pan sides.

  16. Release clamp, remove cake, and cool on a wire rack.

  17. Once cooled, wrap in plastic and store in a cool place. Serve in thin slices.
