Instructions

  1. Preheat the oven to 375 F. Butter and sugar 6 soufflé ramekins.

  2. Melt chocolate in a metal bowl over simmering water, stirring constantly; remove from heat and stir in egg yolks.

  3. In a separate bowl, beat egg whites with salt until soft peaks form, then gradually add 1/3 cup sugar while beating until stiff, glossy peaks develop.

  4. Stir 1/3 of the beaten egg whites into the chocolate mixture, then gently fold in the remaining egg whites until combined and even.

  5. Spoon the mixture into the prepared ramekins; bake immediately for 12 to 15 minutes until risen, or rest for up to 30 minutes before baking. Serve optionally dusted with cocoa or powdered sugar.
