Indian Vada Pav Street Snack Recipe

Instructions

  1. Combine Bengal gram flour, water, and salt to form a smooth, thick batter; set aside.

  2. Process ginger, garlic, and green chilies into a smooth paste. Mix this paste with mashed potatoes and salt.

  3. In a pan, heat 2 tablespoons of oil; add mustard seeds, curry leaves, and turmeric. Fry until the seeds stop spluttering, then stir this into the potato blend.

  4. Divide the potato mixture and roll into balls, slightly smaller than a tennis ball.

  5. Heat oil for deep frying to a medium flame.

  6. Dip each potato ball into the batter, then deep fry until golden. Drain excess oil.

  7. Slit a pav bun; spread with tamarind, mint-coriander, and peanut-garlic chutneys. Insert a hot potato ball, press gently, and serve immediately.
