Indian Spiced Chicken
A rich and tender Indian chicken dish, this recipe features a complex spice blend and creamy yogurt marinade.

Place chicken in a large bowl. Separately, process green chiles, half the garlic, and one ginger piece into a smooth paste.

Combine this paste with garam masala, 3/4 tsp salt, turmeric, yogurt, and half the red chili powder to create the marinade. Coat the chicken thoroughly and set aside.

While chicken marinates, roast cloves, peppercorns, cinnamon, badi elaichi, blanched almonds, cumin, and coriander seeds in a dry shallow pan over medium heat until slightly darker; cool.

Heat 4 tablespoons oil in a deep pan over medium heat. Sauté sliced onions and remaining garlic until pale golden. Remove and drain, reserving the oil and pan.

Process the fried onions, garlic, roasted spices, and remaining ginger into a thick, smooth paste, adding water as needed.

Using the reserved pan, heat 4 tablespoons oil over medium heat. Brown chicken pieces in batches, set aside, and reserve the marinade. Add 2-3 tablespoons more oil, then sauté the ground paste for 2-3 minutes.

Stir in the reserved marinade, browned chicken, tomato puree, remaining red chili powder, salt, and 1/2 cup hot water.

Simmer until chicken is tender and most liquid has reduced. Garnish with fresh coriander and serve.
