Instructions

  1. In a separate pot, bring water, milk, sugar, and cardamom to a rolling boil over medium heat, stirring often.

  2. Meanwhile, heat ghee in a deep pan over medium heat, then add sooji and roast, stirring frequently, until light golden and aromatic.

  3. Add cashews and raisins to the sooji and mix well.

  4. Carefully pour the boiling water-milk mixture into the sooji, stirring continuously to prevent lumps; break any lumps with the spoon.

  5. Cook until the mixture thickens and begins to pull away from the pan sides.

  6. Remove from heat, allow to cool to lukewarm, and serve garnished with dried fruit or nuts if desired.
