Indian Samosa Snack

A popular Indian snack, samosas are savory pastries filled with spiced potatoes, best served hot with chutney.

Instructions

  1. Combine flour, ghee, and salt, then gradually add water to form a firm, smooth dough; set aside.

  2. Heat 2 tablespoons oil in a pan, add cumin seeds until they splutter, then stir in coriander, turmeric, red chili, raw mango, and garam masala powders for a few seconds.

  3. Incorporate potato and salt into the spice mixture, then simmer for 7 to 10 minutes; set aside.

  4. Divide the dough into golf ball-sized portions, rolling each into a 7-8" diameter circle on a floured surface.

  5. Cut each circle in half, then wet the straight edge of a semi-circle, fold it into a cone, and seal.

  6. Fill each cone 3/4 full with the potato mixture, wet the open edges, and seal, repeating for all dough.

  7. Deep fry samosas until golden, then drain on paper towels.

  8. Serve hot with chutney.
