Indian Guava Cheese
A chewy and sweet confection, this guava paste is ideal when prepared with fresh guavas.

Instructions

Wash, dry, peel, and halve guavas, removing stems and brown spots.

Scoop out the pulp and seeds, separating thicker fruit from the seeds.

Blend the seedless fruit until pureed.

Press the seed-containing pulp through a sieve with a few tablespoons of water to extract additional pulp, then discard the seeds.

Combine all extracted guava pulp and measure its total volume.

Add sugar, one cup less than the measured pulp volume, and mix thoroughly.

Transfer the guava-sugar mixture to a large, heavy-bottomed pan and cook over medium heat, stirring frequently to prevent burning.

Continue cooking until the mixture thickens, turns a dark reddish-brown, and no longer sticks to the pan.

Grease a cookie sheet or shallow dish, then spread the hot guava paste onto it in a thick layer.

Let cool almost completely, then cut into desired shapes while still warm.

Once fully cooled, wrap in wax paper and store in an airtight container.
