Indian Chicken Pilaf (Pulao)

Instructions

  1. Combine 1 tablespoon each garlic and ginger paste, red chili powder, 3/4 teaspoon salt, and lemon juice in a large bowl.

  2. Coat chicken with the marinade, then refrigerate for 15-20 minutes.

  3. In a large pot, fry onions until golden.

  4. Add 1 tablespoon each of garlic and ginger paste and sauté for 1-2 minutes.

  5. Stir in tomatoes, coriander, cumin, and garam masala; sauté until oil separates.

  6. Add marinated chicken and brown well, stirring frequently.

  7. Stir in yogurt and cook for 1-2 minutes.

  8. Mix in rice and chicken stock.

  9. Bring to a boil, then cover and simmer until rice and chicken are cooked and liquid is absorbed.

  10. Remove from heat and let rest covered for 7-10 minutes.

  11. Adjust salt, garnish with fresh coriander, and serve.
