Indian Bhajias (Pakoras)

Crispy vegetable and paneer fritters, also known as Pakoras, make an ideal snack, especially when served with sweet-sour tamarind chutney.

Instructions

  1. Preheat oil and reduce the flame to medium.

  2. Prepare vegetables: separate cauliflower florets, thinly slice potatoes and onions, trim spinach, and cube paneer.

  3. Combine gram flour, all spices, and water to create a thick batter; season with salt.

  4. Coat the prepared vegetables thoroughly with the batter.

  5. Deep-fry the coated vegetables until golden brown.

  6. Drain the fritters on paper towels and serve with tamarind chutney or tomato ketchup.
