Incredibly Moist Coffee-Walnut Snack Cake
A delicious coffee-walnut snack cake is infused with strong coffee or espresso and finished with a rich coffee cream cheese frosting.

Instructions

Preheat the oven to 350 F (180 C) and grease and flour an 8-inch round cake pan.

Finely chop 1/2 cup of walnuts and set aside.

Combine flour, baking powder, and salt.

Beat 4 ounces softened butter with granulated sugar until light and fluffy.

Add eggs one at a time, beating after each addition, then blend in vanilla.

Combine milk with 3 tablespoons espresso or coffee.

On low speed, alternately blend the flour mixture and the milk-espresso mixture into the creamed butter-sugar mixture until well combined.

Fold in the finely chopped walnuts.

Spread the batter into the prepared pan.

Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.

Cool the cake in the pan for 10 minutes, then remove and cool completely on a rack.

For the frosting, blend confectioners' sugar, 2 tablespoons butter, and cream cheese.

Beat in strong espresso or coffee, one teaspoon at a time, until the frosting is fluffy and spreadable; add more confectioners' sugar if too thin.

Coarsely chop the remaining 1/4 cup of walnuts.

Spread the frosting over the cooled cake and sprinkle with the coarsely chopped walnuts.
