Instructions

  1. Cook 2 cups sushi or medium-grain rice according to package directions.

  2. After cooking, fluff the rice and let it rest, covered, for 10 to 15 minutes.

  3. Whisk together 2 teaspoons granulated sugar and 2 tablespoons rice vinegar in a bowl.

  4. Transfer the cooked rice to a large bowl, spread thinly, and fan until cool enough to handle.

  5. Incorporate the vinegar-sugar mixture into the cooled rice while continuing to fan.

  6. Mix 2 crumbled sheets of nori or gim into the seasoned rice.

  7. Wet hands to prevent sticking, then divide the rice into 20 egg-shaped portions.

  8. Firmly press each rice ball into an inari pocket.

  9. Serve immediately.
