Idlis Steamed Rice Cakes

Instructions

Wash and soak rice and urad dal separately overnight.

Grind each soaked ingredient separately into a thick paste, using minimal water.

Combine the pastes, add salt, and let the batter ferment overnight.

Start heating 2 cups of water in a large pot for steaming.

Grease idli molds with cooking oil and fill each three-quarters full with batter.

Place the idli tray into the pot and steam for 20 minutes.

Insert a toothpick into an idli to check for doneness; it should come out clean.

Serve hot with sambar or South Indian coconut chutney.
