Idlis Steamed Rice Cakes

Instructions

  1. Wash and soak rice and urad dal separately overnight.

  2. Grind each soaked ingredient separately into a thick paste, using minimal water.

  3. Combine the pastes, add salt, and let the batter ferment overnight.

  4. Start heating 2 cups of water in a large pot for steaming.

  5. Grease idli molds with cooking oil and fill each three-quarters full with batter.

  6. Place the idli tray into the pot and steam for 20 minutes.

  7. Insert a toothpick into an idli to check for doneness; it should come out clean.

  8. Serve hot with sambar or South Indian coconut chutney.
