Içli Köfte (Turkish Stuffed Meatball)
A traditional Middle Eastern-influenced Turkish appetizer, Icli Kofte features fried bulgur meatballs filled with savory ground meat, nuts, and spices.

Instructions

Brown 1/4 pound ground beef in a small skillet; add onion and cook until softened.

Stir in ground nuts, salt, black pepper, paprika, and hot red pepper flakes; sauté briefly and set aside to cool.

Combine bulgur, ground beef, black pepper, salt, potato, egg, and onion in a large bowl; knead to form a dough.

Portion the dough into walnut-sized pieces. Form each into a ball, create a cavity, fill with the meat and nut mixture, then seal and shape into a spindle or football form.

Heat generous sunflower oil in a large skillet. Fry the shaped meatballs evenly until dark golden-brown.

Drain cooked meatballs on paper towels. Serve hot, garnished with fresh parsley, and offer with a yogurt, grated cucumber, and dill dipping sauce.
