Hunter's Chicken With Tomatoes and Mushrooms

Instructions

Season chicken with salt, pepper, and thyme.

Heat oil in a large skillet over medium-high heat; brown chicken on all sides, then remove and set aside.

In the same skillet with 1 tablespoon oil, sauté onion and mushrooms until tender.

Add garlic and sauté for 1 minute, then add wine and simmer until reduced.

Stir in tomatoes and chicken broth, return chicken to the pan, cover, and simmer for 15 minutes.

Uncover and continue cooking for 5 to 10 minutes.

Serve chicken garnished with parsley, alongside potatoes or noodles.
