Hunter's Chicken With Tomatoes and Mushrooms

Instructions

  1. Season chicken with salt, pepper, and thyme.

  2. Heat oil in a large skillet over medium-high heat; brown chicken on all sides, then remove and set aside.

  3. In the same skillet with 1 tablespoon oil, sauté onion and mushrooms until tender.

  4. Add garlic and sauté for 1 minute, then add wine and simmer until reduced.

  5. Stir in tomatoes and chicken broth, return chicken to the pan, cover, and simmer for 15 minutes.

  6. Uncover and continue cooking for 5 to 10 minutes.

  7. Serve chicken garnished with parsley, alongside potatoes or noodles.
