Instructions

  1. In a mixing bowl, combine eggs, milk, club soda, and orange juice, then stir in flour, sugar, salt, and vanilla extract to form a smooth batter.

  2. Heat 1 teaspoon butter in an 8-inch skillet and pour enough batter to coat the bottom in a thin, even layer.

  3. Cook each pancake for 2 minutes on the first side and 1 1/2 minutes on the second side, until lightly browned.

  4. Remove and keep cooked pancakes warm while repeating the process with the remaining butter and batter.

  5. Fill the cooked pancakes with your desired sweet or savory ingredients, then roll or fold into triangles.

  6. Dust with confectioners' sugar and serve, optionally garnished with whipped cream, chocolate, or a sauce.
