Hungarian Rice Cake (Rizskoch)

Instructions

  1. Preheat the oven to 350F and lightly spray a 9-inch springform pan.

  2. Cook milk, rice, and salt in a saucepan over low heat for 35 minutes until creamy, then stir in butter and let cool.

  3. Combine egg yolks, sugar, and optional raisins or zest with the cooled rice mixture until well incorporated.

  4. Whip egg whites until stiff, then fold one-quarter into the rice mixture, followed by the remaining whites.

  5. Transfer the mixture to the prepared pan and bake for 35 to 45 minutes, or until golden brown and a toothpick tests clean.

  6. Cool completely in the pan before removing. Dust with confectioners' sugar and serve in wedges, optionally with plum preserves and whipped cream.
