Hungarian Fried Lángos

Instructions

  1. Heat an inch of canola oil to 350 F in a large skillet.

  2. Combine 1 cup mashed potato, 2 1/2 teaspoons instant yeast, 1 teaspoon sugar, 1 3/4 cups all-purpose flour, 1 tablespoon vegetable oil, 3/4 teaspoon salt, and 1/2 cup milk in a mixer bowl.

  3. Mix until well moistened, then knead for 5 to 7 minutes until the dough is smooth and elastic.

  4. Transfer the dough to a greased bowl, cover, and let rise for 1 hour until doubled.

  5. Divide the dough into 4 equal portions, shape each into a ball, and let rest for 20 minutes on a floured board.

  6. Flatten each dough ball into an 8-inch disc and make slits in the center.

  7. Fry each lángos individually for about 2 minutes per side until golden, then drain on paper towels.

  8. Serve hot, rubbed with garlic, and seasoned with salt.
