Huevos Rotos (Broken Eggs)

A Spanish specialty, huevos rotos consists of fried eggs served over a bed of fried potatoes and your choice of Spanish meats.

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté onions until soft (approx. 8 minutes), then remove and set aside.

  2. Peel and cut potatoes into fries. Heat remaining olive oil (except 1 tbsp) in the same pan, salt potatoes, and fry until cooked. Divide fried potatoes into four bowls and keep warm.

  3. Slice and sauté chorizo or chistorra in 1 tablespoon of olive oil in a small pan; set aside. If using cured ham, cut into bite-sized pieces and divide among bowls.

  4. Evenly sprinkle the prepared sausage or ham and sautéed onions over the fried potatoes in each bowl.

  5. Fry eggs sunny-side up in a small amount of olive oil. Place one to two eggs per bowl, breaking them just before serving. Serve immediately, optionally with warm bread.
