Instructions

  1. Preheat the oven to 500F/260C.

  2. Brush tortillas with oil, place on a cookie sheet, and bake for 5 to 10 minutes until crisp.

  3. Heat the salsa ranchera until very hot.

  4. In a non-stick skillet, heat the remaining oil and fry eggs slowly until whites are firm and yolks are runny.

  5. Season the fried eggs with salt and pepper.

  6. Arrange two tortillas on each plate, place a fried egg on top of each tortilla, and then pour approximately 1/4 cup of hot salsa over each egg.

  7. Allow to sit for about 1 minute, then garnish with cilantro if using, and serve.
