How to Make Your Own Gomme Syrup

Instructions

  1. Heat 1/4 cup water to near boiling.

  2. Combine the hot water with 1 ounce gum arabic in a glass container. Stir thoroughly, let sit for several hours until dissolved, then stir until smooth.

  3. In a saucepan, combine 1 cup sugar with 1/2 cup water. Bring to a slow boil, stirring constantly until the sugar is fully dissolved.

  4. Reduce heat to a simmer, add the prepared gum paste, and continue simmering for 5 minutes, stirring until a very thick syrup forms. Skim off any foam from the surface.

  5. Remove from heat and cool completely.

  6. Strain the syrup through cheesecloth or a fine-mesh sieve.

  7. Bottle the finished syrup in a sealed glass container and refrigerate.
