Instructions

  1. Lightly grease lollipop molds, then wipe to leave a thin oil layer.

  2. Insert lollipop sticks into molds.

  3. Combine 1 cup sugar, 1/2 cup light corn syrup, and 1/4 cup water in a medium saucepan over medium-high heat.

  4. Brush down any sugar crystals and stir until sugar dissolves.

  5. Boil without stirring until the mixture reaches 300 F (149 C).

  6. Remove from heat, let bubbling stop, then stir in 1 1/2 teaspoons extract and optional food coloring.

  7. Spoon candy into mold cavities, ensuring stick backs are covered.

  8. Cool completely for about 10 minutes, then remove hardened lollipops.
