How to Make Salt Pork

Instructions

  1. Combine salt and sugar, then rub a portion onto pork belly slices.

  2. Create layers in a container: spread a salt-sugar mixture, add pork belly, and sprinkle with more mixture. Repeat this layering process.

  3. Cover and refrigerate for two days to cure; the salt pork can be stored for up to a year.

  4. Before use, rinse the salt pork and pat it dry.

  5. Cut the pork into cubes or strips.

  6. Cook the pork over low heat until fat is rendered.

  7. Sauté chopped onion in the rendered fat for a flavorful chowder base.
