How to Make Salmon Jerky

Basic salmon jerky, adaptable with various spices, can be made using a dehydrator, smoker, or oven.

Instructions

  1. Start boiling water with salt, brown sugar, and soy sauce in a pot until sugar dissolves, then cool to room temperature.

  2. Slice salmon into 1/4- to 1/2-inch strips, place in the cooled brine, and refrigerate for 8-10 hours to marinate.

  3. Remove salmon from brine, rinse with clean water, drain, and pat dry.

  4. Spray dehydrator racks and arrange salmon strips with space for air circulation. Optionally sprinkle with cayenne pepper. Dry according to dehydrator instructions until desired doneness.

  5. Alternatively, dry in an oven on its lowest setting or a smoker for 8+ hours, adjusting for desired dryness. Store finished jerky in an airtight container.
