How to Make Poori (Fried Indian Flatbread)

Instructions

  1. Heat oil or ghee in a thick-bottomed pan over medium heat.

  2. Combine whole wheat flour and a pinch of salt in a large mixing bowl.

  3. Gradually add water and mix to form a soft dough.

  4. Knead the dough on a clean surface until smooth and medium-soft.

  5. Incorporate 2 tablespoons of oil or ghee into the dough by kneading until silky.

  6. Cover the dough with a damp cloth and refrigerate for 20 minutes.

  7. Divide the chilled dough into smooth, golf ball-sized portions.

  8. On a lightly floured surface, roll each ball into a 5-inch circle, approximately 4-5 mm thick.

  9. Once the oil is hot, fry pooris one at a time, pressing gently to puff, until golden on both sides.

  10. Drain fried pooris on paper towels and serve immediately.
