Heat a nonstick or cast iron skillet over medium-low heat and melt 2 tablespoons unsalted butter.

Crack 8 large eggs into a bowl. Vigorously whisk until pale, foamy, and airy, optionally in batches. Mix in 1/2 cup whole milk, salt, and pepper.

Pour the egg mixture into the hot butter. Cook for up to one minute without stirring, allowing the bottom to set without browning.

Using a heat-resistant spatula, gently push the cooked edges towards the center, tilting the pan to allow the liquid egg to flow underneath. Repeat until the eggs are almost entirely set but still moist.

Turn off the heat. Continue to gently stir and fold the eggs until fully firm, keeping curds large. Incorporate any cheese now.
