How to Make Madombi (Dumplings)
Botswanan bready dumplings, known as Madombi, are traditionally cooked atop a stew until steamed and firm.

Instructions

Sift flour into a large bowl, then whisk in the remaining dry ingredients.

Gradually add warm water, stirring with a fork until a sticky dough forms.

Flour a work surface, then knead the dough for at least 10 minutes until it becomes smooth, elastic, and no longer sticky.

Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for 45 minutes until doubled in size.

Divide the risen dough into 6 to 8 portions.

To cook, place the dough balls onto a simmering stew approximately 30 minutes before it is ready. Push the dumplings halfway into the stew, cover, and steam over medium heat for 25 minutes.
