How to Make Jerky From Ground Turkey

Instructions

  1. Preheat the dehydrator to 155 F.

  2. In a large bowl, combine lemon juice, lemon zest, onion, soy sauce, Worcestershire sauce, sugar, olive oil, paprika, garlic, salt, pepper, and optional liquid smoke and cayenne pepper; let sit for 15 minutes.

  3. Add ground turkey to the mixture and combine thoroughly, then refrigerate for 1 hour.

  4. On waxed or parchment paper, roll or pat a portion of the jerky mixture to 1/4-inch thickness.

  5. Place a dehydrator tray over the jerky and invert to transfer; remove the paper and patch any holes.

  6. Dehydrate for 4 to 6 hours at 155 F, checking after 4 hours for a chewy, not crunchy, texture.

  7. Serve.
