Instructions

  1. Start boiling well-salted water for cooking the noodles.

  2. Combine 1 cup all-purpose flour and 1/2 teaspoon fine sea salt; create a well and crack in 2 large eggs.

  3. Beat eggs, gradually incorporating flour until a sticky dough forms.

  4. Turn dough onto a well-floured surface and knead for 5 to 10 minutes, adding flour as needed, until smooth and firm.

  5. Wrap dough in plastic and chill for a minimum of 30 minutes.

  6. Divide the chilled dough in half; roll one portion on a floured surface to your preferred thickness, rotating to prevent sticking.

  7. Cut the rolled dough into even noodles using a sharp knife or pizza cutter.

  8. Arrange noodles on a drying rack; repeat rolling and cutting with the second dough portion.

  9. Boil the noodles in the salted water for 2 to 10 minutes until tender, then drain.
