How to Make Funnel Cake with Pancake Mix

Instructions

  1. Heat vegetable oil in a 10-inch or larger skillet to 350 F over medium heat.

  2. Combine 1 cup pancake mix, 1 tablespoon sugar, and 1 teaspoon vanilla extract in a bowl; gradually whisk in 1/2 cup water until a cake batter consistency is achieved.

  3. Transfer batter to a pastry bag with a 1/4-inch tip, or a zip-top bag with a snipped corner.

  4. Quickly squeeze the batter in a circular motion into the hot oil to form a large disk.

  5. Cook for about 1 minute, then flip and cook for 30 seconds to 1 minute more until golden brown, then remove from oil.

  6. Drain excess oil on a paper towel-lined plate.

  7. Sprinkle with confectioners' sugar and serve warm.
