How to Make Empanada Dough

Sift 4 cups all-purpose flour into a bowl; stir in 1 to 1 1/2 teaspoons salt and 3 tablespoons sugar.

Cut 2 tablespoons cold unsalted butter and 3/4 cup lard (or shortening) into the flour mixture until well blended.

Whisk 2 large egg yolks with 3/4 cup water. Gradually add 1/2 cup of the water-egg mixture to the flour, kneading until the dough begins to form smoothly.

Continue kneading, adding more water-egg mixture as needed until the dough is smooth.
