How to Make Basic Turkey (or Chicken) Gravy

Instructions

  1. Skim fat from turkey or chicken pan drippings, reserving 1/4 cup of fat and combining remaining drippings with stock or water to yield 2 cups liquid.

  2. Heat the reserved 1/4 cup fat in a saucepan over medium heat.

  3. Whisk in 1/4 cup all-purpose flour and cook for 2 minutes, stirring constantly.

  4. Gradually add the 2 cups liquid to the flour mixture, whisking until the gravy thickens and bubbles, then cook for 1 more minute.

  5. Season the gravy with salt and pepper to taste.
