How to Make a Rye Sourdough Loaf

A delicious homemade sourdough rye can be easily prepared with some initial time and planning.

Instructions

  1. Preheat oven to 425 F and place a bowl of boiling water on the lowest shelf.

  2. Mix bread flour, rye flour, and salt in a large bowl, then add starter and water gradually to form a sticky dough.

  3. Knead the dough for 10-15 minutes until smooth and elastic, adjusting water or flour as needed.

  4. Lightly oil a mixing bowl, transfer the dough into it, cover, and let rise in a cool place for 6 hours or until doubled, or overnight.

  5. Punch down the dough, lightly knead for a few minutes, shape into a ball, dust with flour, and place in a floured banneton or bowl; cover and let rise for 8 hours in a cool place.

  6. Line a baking sheet with oiled paper, transfer the dough onto it, and place in the oven.

  7. Bake for 30 minutes at 425 F, then reduce temperature to 400 F and bake for another 20 minutes, until golden brown and hollow-sounding.

  8. Transfer the loaf to a cooling rack and cool completely before serving.
