How to Make a Classic French Bordelaise Sauce

Instructions

  1. Combine 3/4 cup dry red wine, 2 chopped shallots, 1/4 teaspoon dried thyme, and 1 bay leaf in a small saucepan over medium heat.

  2. Bring to a boil and reduce the mixture by half.

  3. Add 2 cups beef stock, bring to a boil again, and skim any foam.

  4. Continue cooking until the sauce reduces by 75% total and coats the back of a spoon.

  5. Strain the sauce through a fine-mesh sieve.

  6. Season with salt and pepper to taste.
