Instructions

  1. Preheat your grill to high heat, ensuring the grate is clean and oiled.

  2. Season the skirt steak liberally with salt, optionally adding pepper or cayenne, then let it sit at room temperature for at least 30 minutes, or refrigerate overnight.

  3. Ensure the steak reaches room temperature before placing it on the hot grill.

  4. Sear the first side for 3 minutes for medium-rare or 4 minutes for medium, until it releases from the grill.

  5. Flip and cook the second side for another 3 to 4 minutes, reaching 120-125F for rare, 125-130F for medium-rare, or 130-135F for medium.
