How to Cure Sardines

Instructions

  1. Prepare sardines by removing their heads and guts, then rinse them clean and pat dry.

  2. Arrange the prepared sardines in a pan and sprinkle salt thoroughly over both sides.

  3. Cover the pan tightly with plastic wrap and refrigerate for 36 to 48 hours.

  4. Remove the cured sardines from the pan, rinse off all salt, and peel the skin if preferred.

  5. Serve the cured sardines or store them covered completely in oil in the fridge for up to one week.
