Instructions

  1. For yogurt-based sauces, combine 1 cup of yogurt with one of the following flavor combinations, adding a pinch of baking soda if needed to reduce acidity: freshly ground pepper, 2 tablespoons chopped arugula, 1 tablespoon chopped chives, and salt to taste; or 2 tablespoons mustard and 1 teaspoon fennel seed; or 1 to 2 tablespoons chopped mint, 1/2 teaspoon sweet paprika powder, and salt to taste; or 2 tablespoons capers, several chopped sardine fillets, and cayenne pepper to taste; or 1 to 2 teaspoons curry powder, chopped mint, and salt to taste; or several chopped garlic cloves, 1 teaspoon crushed pink peppercorns, and salt to taste; or 1 to 2 tablespoons cognac, 1/4 cup raisins, 1/2 teaspoon ground cloves, and salt to taste.

  2. For tomato-based sauces, mix 1/2 cup of tomato juice with 1/2 cup chopped tomatoes, adding a pinch of baking soda if needed, then incorporate salt to taste and one of the following flavor combinations: chopped basil and chives; or 1 teaspoon fennel, 1 tablespoon chopped parsley, and cayenne pepper to taste; or several chopped garlic cloves, 1 teaspoon chopped rosemary, ground black pepper, and 1 tablespoon chopped parsley; or 1/4 cup tuna fish, chopped sardines, and black pepper; or 3 tablespoons finely chopped onion and crushed black pepper.
