Hot Pepper Jelly With Pectin

Instructions

  1. Wash and rinse jars, lids, and bands; then place jars in a canner with water and bring to a simmer to keep hot, and similarly simmer lids in a separate small saucepan.

  2. Remove stems and seeds from peppers, then finely grind all peppers.

  3. In a nonreactive pot, combine the ground peppers and their juice with sugar and vinegar.

  4. Bring the mixture to a full boil, then reduce heat and simmer for 10 minutes.

  5. Stir in green food coloring and pectin. Bring to a rolling boil over high heat, then boil for 1 minute.

  6. Remove from heat and ladle the mixture into hot, sterilized half-pint jars, leaving 1/4-inch headspace.

  7. Seal immediately with lids, screw on bands, and process in a hot water bath for 15 minutes.

  8. Remove jars and let cool upright.
