Hot Chocolate Cookies

Instructions

  1. Preheat the oven to 350 F and line two baking sheets with parchment paper or silicone liners.

  2. In a medium bowl, whisk together hot cocoa mix, flour, baking powder, and salt; set aside.

  3. In a deep bowl, beat butter and sugar for 2 to 3 minutes until creamy.

  4. Add egg and vanilla to the butter mixture, then beat for 1 minute until fluffy.

  5. Gradually incorporate the dry flour mixture into the wet ingredients, mixing on low speed, then increasing to high until just combined and no flour streaks remain, about 1 minute.

  6. Scoop 2 teaspoons of dough onto the prepared pans, spacing them two inches apart, and bake for 8 minutes.

  7. Remove the cookies from the oven, place a marshmallow cut-side down onto the center of each, gently pressing to flatten slightly.

  8. Bake for another 3 to 4 minutes until marshmallows melt and shrink without toasting.

  9. Cool cookies on the baking tray for 15 minutes before transferring to a wire rack to cool completely.
