Hot Chocolate Cookies
These hot chocolate cookies combine the comforting flavors of cocoa and a baked treat, complete with a gooey marshmallow topping.

Instructions

Preheat the oven to 350 F and line two baking sheets with parchment paper or silicone liners.

In a medium bowl, whisk together hot cocoa mix, flour, baking powder, and salt; set aside.

In a deep bowl, beat butter and sugar for 2 to 3 minutes until creamy.

Add egg and vanilla to the butter mixture, then beat for 1 minute until fluffy.

Gradually incorporate the dry flour mixture into the wet ingredients, mixing on low speed, then increasing to high until just combined and no flour streaks remain, about 1 minute.

Scoop 2 teaspoons of dough onto the prepared pans, spacing them two inches apart, and bake for 8 minutes.

Remove the cookies from the oven, place a marshmallow cut-side down onto the center of each, gently pressing to flatten slightly.

Bake for another 3 to 4 minutes until marshmallows melt and shrink without toasting.

Cool cookies on the baking tray for 15 minutes before transferring to a wire rack to cool completely.
