Instructions

  1. Start boiling a pot of generously salted water.

  2. Rub cleaned chicken feet with kosher salt; let stand 10 minutes, then rinse under cold water.

  3. Blanch chicken feet in the boiling water for 5 minutes; drain well.

  4. Dry-sear chicken in a 14-inch sauté pan over high heat until lightly brown.

  5. Add remaining ingredients, bring to a simmer, and cook covered for 10 minutes.

  6. Uncover and simmer until the sauce thickens and reduces, tossing frequently to coat the feet.

  7. Garnish with minced scallions and toasted sesame seeds; serve.
