Horta Vrasta: Boiled Leafy Greens

A healthy and traditional Greek staple, horta vrasta are simple boiled greens often served as a side dish.

Instructions

  1. Start boiling a large pot of water.

  2. Wash and trim greens, discarding any brown leaves.

  3. Soak greens in water with vinegar to remove sand, then transfer to a colander.

  4. Add 1 tablespoon of salt to the boiling water.

  5. Submerge greens and boil for 20 minutes, or until stems are tender.

  6. Drain thoroughly and place in a bowl.

  7. Dress with olive oil, lemon juice, salt, and pepper to taste.

  8. Serve warm or at room temperature.
