Horta Vrasta: Boiled Leafy Greens
A healthy and traditional Greek staple, horta vrasta are simple boiled greens often served as a side dish.

Instructions

Start boiling a large pot of water.

Wash and trim greens, discarding any brown leaves.

Soak greens in water with vinegar to remove sand, then transfer to a colander.

Add 1 tablespoon of salt to the boiling water.

Submerge greens and boil for 20 minutes, or until stems are tender.

Drain thoroughly and place in a bowl.

Dress with olive oil, lemon juice, salt, and pepper to taste.

Serve warm or at room temperature.
