Horchata: Mexico's Favorite Rice Drink

A refreshing Mexican rice drink, horchata, is easily prepared with rice, cinnamon, and a hint of lime zest.

Instructions

  1. Pulverize rice in a blender until it has a floury consistency.

  2. Combine the pulverized rice with a cinnamon stick and lime zest in an airtight container, then let it rest overnight at room temperature.

  3. Return the rice mixture to the blender and blend until the cinnamon stick pieces are fully broken down.

  4. Stir in 2 cups of water.

  5. Refrigerate the mixture for 2 hours.

  6. Strain the liquid through a fine sieve or cheesecloth into a pitcher, pressing to extract all milky rice water.

  7. Add the remaining 3 cups of water and sugar, then stir until the sugar dissolves.

  8. Refrigerate the horchata until completely chilled and serve over ice as desired.
