Honey Roasted Peanuts

Instructions

  1. Preheat the oven to 325 F and line a baking sheet with foil, then spray with nonstick cooking spray.

  2. In a large microwave-safe bowl, melt butter with honey, vanilla, cinnamon, and 1 teaspoon salt for about 45 seconds, stirring halfway, then stir until smooth.

  3. Add peanuts to the honey mixture and stir until evenly coated.

  4. Spread the coated peanuts in an even layer on the prepared baking sheet.

  5. Bake for 20 minutes, stirring every 5 minutes for even roasting.

  6. Remove peanuts from the oven once golden brown and stir to distribute the honey.

  7. After a minute or two, sprinkle with granulated sugar and the remaining 1 teaspoon salt, then stir.

  8. Stir occasionally as the peanuts cool to prevent clumping.
