Instructions

  1. Preheat broiler or grill to medium heat.

  2. Combine orange juice concentrate, oil, honey, dried dill, white pepper, salt, and orange zest for the marinade.

  3. Place fish in a baking dish, pour marinade over, and chill for 30 minutes; for immediate cooking, broil and brush with marinade without chilling.

  4. Remove fish, reserving marinade. Broil or grill fish 4 to 6 inches from heat, turning once and brushing with reserved marinade, until thoroughly cooked and flaking easily, approximately 5 to 10 minutes.

  5. Broil fish less than 1/2-inch thick without turning. Discard remaining marinade and serve.
