Preheat broiler or grill to medium heat.

Combine orange juice concentrate, oil, honey, dried dill, white pepper, salt, and orange zest for the marinade.

Place fish in a baking dish, pour marinade over, and chill for 30 minutes; for immediate cooking, broil and brush with marinade without chilling.

Remove fish, reserving marinade. Broil or grill fish 4 to 6 inches from heat, turning once and brushing with reserved marinade, until thoroughly cooked and flaking easily, approximately 5 to 10 minutes.

Broil fish less than 1/2-inch thick without turning. Discard remaining marinade and serve.
