Honey-Ginger Switchel

Instructions

  1. Start boiling 1 cup of water in a small saucepan while preparing ginger by peeling and chopping or slicing it.

  2. Add the prepared ginger to the boiling water, remove from heat, and let it steep until completely cool.

  3. Pour the cooled ginger water and ginger into a 1-quart jar with the remaining water, then add honey, apple cider vinegar, and the juice of half a lemon.

  4. Secure the lid, shake the jar thoroughly, and store in the refrigerator overnight.

  5. Serve 1/2 to 1 cup of switchel cold or over ice daily.
